Semi-Paleo/Gluten-Free Fruit Bars

                                            Semi-Paleo, Gluten-Free, and Dairy Free
This is a recipe I created/adapted from other fruit bar recipes I found and liked, but decided to give these bars my own twist.  My family loves it and I am working on making it a full paleo with nut flours.
Ingredients:
  • 1 egg
  • 1t vanilla
  • 1/2 C butter (softened)
  • 1/2 C sugar (or less to taste)
  • 1C walnuts, ground into meal
  • 1C brown rice flour 
  • 1/2 C tapioca flour  
  • 1-2t ginger (to taste)
  • 1-4t cinnamon (to taste)
  • about 2 large pieces or 2-3C whole fruit
  • 1/4 C honey (or to taste)
  • juice of lemon (or to taste) 

Preheat oven to 350 degrees F.
Cream butter and sugar together in bowl, then add egg and vanilla.  In food processor, blend walnuts into a meal or slight paste.  Once the walnuts are in meal form, place in a bowl and add the brown rice, tapioca flour, ginger, and cinnamon.  Mix all the dry ingredients well.  Don't worry if you have bits of walnut meal that isn't mixing well.  Set aside.
Now, after washing and cutting your desired fruit, place it in the blender with honey and lemon.  Blend into a smooth puree.
Mix dry and wet ingredients together to form anywhere from a paste to a thick ball of dough.  Place about half of the dough into the bottom of a butter grease pan and spread (or press) about 1 inch thick.  Pour the puree into the pan and then crumble the leftover dough onto the top of puree.
