Almond Butter Mug Bread with Nunaturals Stevia

 IT'S THE SUPER POPULAR ALMOND BUTTER BREAD...BUT IN A MUG!
I don't know if any of you have heard of this nifty little way to make a super quick, single serving of bread, but here's my take on it.

Almond Butter Bread
  • 2T Almond Butter
  • 1 egg
  • 1-2 droppers of Nunaturals Vanilla Stevia 
  • 1/8t baking powder
  •  any additions you'd like (such as chocolate chips or shredded coconut)
Mix egg well and then add the rest of the ingredients.  Whisk (or stir) until you see a thick, well combined batter.  Make sure you don't have any almond Butter chunks...unless you want that...I find it is quite tasty! 
"Bake" in microwave for 1-3 minutes or until mug bread has risen and is no longer wet.  Enjoy!

Skinny Coconut Oil

This stuff is amazing!  I love, love, love this brand of Coconut Oil. It has so many all beneficial and healing ingredients...while being really yummy.  Skinny Coconut Oil has done the work in creating a superior oil with the highest quality.  This morning I enjoyed trying some in my little concoction...here is the recipe if you want to try.  Please note that my recipe is probably going to taste quite different from most normal bread, but I really like it and think you may too.

Coconut Flour Mug Bread:
  • 4T Coconut Flour
  • 1T Skinny Coconut Oil
  • 1-1t Nunaturals No Carbs Blend or dropper of Stevia
  • 1/8t baking soda (just a sprinkle)
  • water to create a smooth batter (important)
  • optional additions: vanilla, cinnamon, nutmeg, ginger, etc.
Select a large enough mug to mix the ingredients in or use a mixing bowl and then pour it into a bowl or mug.
First, melt Skinny Coconut Oil in the mug and let it cool for a bit while you prepare the other ingredients.  Now, mix in the egg until well combined.  Add in the Water, Coconut Flour, Baking Soda, desired sweetener, and any additions you would like.
Be sure to add in enough water until the batter is very smooth, but not runny.  This is a step I tend to eyeball till I see the batter is the right consistency.
Bake in the microwave for 2-4 minutes (depending on microwave strength).  Enjoy warm!

Skinny Coconut Oil is such an excellent ingredient for baking, sauteing vegetables, adding to soups or smoothies, using as a skin moisturizer and even...oil pulling!  Haven't heard of oil pulling?  I hadn't either before...a month ago perhaps, but thanks to Skinny Coconut Oil I learned even more about how beneficial oil pulling is.  Maybe you'll learn something new too!

Before pulling consult your Dentist or Physician.
We recommend "pulling" first thing in the morning after waking up. Follow the steps below for better health and a cleaner mouth!

  • Step 1: Upon rinsing, place one tablespoon of Skinny Coconut Oil into your mouth. While waiting for the oil to melt, start a timer for 20 minutes. 
  • Step 2: After the oil melts, begin to swish in your mouth, without swallowing. Move it around your mouth, teeth, and gums as if it were mouthwash, but don't gargle. The oil will begin to get watery as it mixes with your saliva, but keep swishing. You may also notice that the oil mixture begins to thicken the longer you "pull"...this is a good thing. 
  • Step 3: After the 20 minute timer ends, spit the oil mixture into the sink or toilet and flush it down the drain.
  • Step 4: Rinse your mouth again with warm water, brush your teeth, and scrub your tongue. 
  • Step 5: Enjoy all the benefits that come from oil pulling. 
For best results, oil pull daily for all the benefits!

I love this unsweetened cocoa the best, but another family favorite is Chocolate Syrup. Tasty Brand

Tasty Bite has quickly risen to the top to become the clear winner all gummies in our house.  Even my older brother (who doesn't usually like candy...at..all...)really liked these!  After approx. 2 weeks (I think), all the boxes are gone!  I'd say that is pretty strong evidence that something has proved quite tasty.

Made with all natural fruit juice (along with a few other ingredients), Tasty Brand manages to create a delicious gummy without any GMOs, artifical colors and flavors, or the big one...High Fructose Corn Syrup. 

Please note that they do contain organic cane sugar (so be careful if you or your child is diabetic). But besides the sugar, these snacks are a great treat to have on hand for busy school days, long car rides, or for an everyday snack. 

One the great things about these gummies is the fact that they are gluten-free.  During this no-gluten for a month challenge, S especially was concerned about leaving behind all his favorite foods, but thanks to the help of Tasty Brand Gummies, he has adjusted very well and seems to (perhaps?) even be enjoying this break from gluten.

JK Grain Free Gourmet

It is a chilly morning here at our homestead and though it is a bit of a splurge, I decided to make some Almond Flour Scones for Mom, S, and M.  Both boys had already gone out for some early morning hunting, but by full daylight they came in for some warm food.

I was a bit worried that the recipe I used would be a bit plain or...different in the way that some gluten-free products have been, but these Almond Flour Scones made with JK Gourmet's Almond Flour were amazing and surpassed all our expectations.  S said they were the best thing I have made yet (possibly even the best thing since before his gluten-free for a month challenge).  From S who is a food connoisseur, that is saying a lot.  He thoroughly enjoyed his four scones filled with chocolatey goodness.

M and Mom also loved the delicious scones filled with maple flavor and the goodness of JK's Almond Flour.  It was such a simple, quick recipe that turned out so well.  This is definitely a keeper! I highly recommend JK Gourmet for all their great products.

The other two products we received were a Grain-free bar and Cereal.  We have yet to try the bar, but Mom tasted the cereal the day it arrived and loved it.  She appreciated the crunchiness of this Grain-Free cereal that was very similar to what she remembers of "normal" granola.

Almond Flour Scones:
This is the recipe I used this morning, adapted from Elana's Pantry Gluten-Free Almond Flour Cookbook (http://www.amazon.com/gp/product/158761345X?ie=UTF8&tag=elanaspantryc-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=158761345X)
I made a few changes because I'd rather not use Agave Nectar or Grapeseed Oil in my recipes, but that is just my opinion.  Feel free to follow her recipe if you wish!
  • 2 1/2 cups JK's Gourmet Almond Flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/3 cup melted butter
  • 1/4-1/3C Maple Syrup (the real Pennsylvania stuff)
  • 2 large eggs (preferably from cage-free, pastured chickens)
  • 1 cup Chocolate Chips (dairy-free if you are intolerant)
Preheat oven to 350 degrees and line baking sheet with parchment paper.  Combine Almond Flour, Sea Salt, and Baking Soda in large bowl.  After melting the butter, mix all the wet ingredients together with a hand mixer till thoroughly combined.  Mix the wet ingredients into dry ingredients to form a thick, paste-like batter.  Now add in Chocolate Chips and stir till combined.  Place 1-2 spoonfuls on the baking sheet and bake for 12-17 minutes depending on the size of your spoonfuls.  Let the scones cool for 15-30 minutes on baking sheets.  Enjoy!

This is a great resource for organic, vegan, and allergen-friendly products.  Edward and Sons has a number of great brands that offer soups, bread crumbs, sprinkles, ice cream cones, pasta dinners, mashed potatoes, sauces, rice crackers, coconut products, and more!

As a huge coconut lover myself, it was a real treat to get to review their Coconut Oil and Coconut Water.  Both have all the great benefits of all the healthy fats while also being gluten-free and organic.  From Creamed Coconut, Coconut Flakes, Coconut Flour, Coconut Oil and more, this is a super resource to supply all your coconut needs.  Edward and Sons was the brand of Coconut Flour I bought when I fist tried Coconut Flour.  I (obviously) haven't stopped loving it yet.

The Brown Rice Snaps we sampled were all gone in one night thanks to a hungry Dad just home from work and later a teenage basketball player after a long practice.  My Dad said the flavor was good and the cracker itself wasn't incredible, but I think that the fact that the whole package was gone in less than a night is pretty telling to the fact that they are tasty.

These products from Edward and Sons are high quality and totally organic.  Have you seen them in stores?  I have been amazed to find their great Coconut Flakes in a few grocery stores I visit and hope that they will keep adding more products soon.  Any more allergen-friendly and organic foods we can get to more people is great!  Excellent work Edward and Sons.  You make healthy eating so much easier!

Miss Paleo Mixes

What a treat it was to get to try these cookies, brownies and bread from Miss Paleo Mixes!  After a morning full of Cross Country practice and my first CrossFit practice, I came home to find a lovely package with the mixes inside, all ready for me to make.  I didn't waste much time making all three that very afternoon so the family could test them out after dinner (before dinner, as a snack, etc.)!


 I tried to get some good pictures of them, but I didn't have access to great lighting due to the fact that well...the sun was down and that is my favorite lighting...so this will do for now. : )

One of my absolute favorite things to do after a nice hard workout is bake something for my family.  I love to listen to my favorite health podcasts while baking a new recipe or trying out a new product to review, just like these mixes.  I really appreciated how simple the directions and ingredients are for baking these mixes.  Did you notice that they are Grain-Free, Gluten-Free, Dairy-Free, and completely Paleo-friendly?  Got to love it!
 To me, one of the most telling tests of taste and appeal is when even a gluten eater enjoys a product.  Sure, those of us who have been off the nasty stuff for a while love the taste of Miss Paleo products...but I always like to assess the appeal by offering the really good stuff to someone who's still eating the Standard American Diet.  Well, I made three batches of Miss Paleo's treats on Saturday afternoon.  By Sunday afternoon, all but one small part of the bread were gone (and that had been squirreled away by one who wanted some for breakfast in the morning.)  So that's a dozen brownies, 24 cookies, and a loaf of bread, all gone in 24 hours.  Also, the quality was just as fresh and delicious the second day as the first.
